Huíla is a privileged area for coffee production due to its strategic geographical location, especially the south of Huíla, which is located in an area with a climate that is favorable to the production of specialty coffees.
90% of this decaffeinated coffee comes from the southern area, mainly from the municipality of Pitalito.
The beans selected for decaffeination are high-altitude coffees from small producers in the Pitalito region.
This decaffeinated coffee is characterized by its sweetness, clean cup and acidity provided by this microclimate. The decaffeination process is carried out at Descafecol, where water is combined with mountain spring water and ethyl acetate (EA) of natural origin. The latter is present in all coffee beans in their natural state (as well as in many fruits and vegetables), so there is no addition of synthetic chemicals of any kind. Natural EA is obtained through a process based on sugar cane and, together with mountain spring water, are the only elements with which the coffee comes into contact.
This water-EA process allows for a gentle extraction of caffeine from the bean, avoiding excessive heat and pressure, thus maintaining the natural structure and characteristics of the coffee bean.
