More Information On This Coffee
Mr. Hernández has created a diverse coffee garden in the serene village of Las Chinas, carefully planning each section of his land. The farm showcases three distinct varieties: 700 young Gesha trees, just entering their second harvest. Along they planned Caturra and Colombia, coffee varieties they started. Beyond coffee, the farm is dotted with orange trees and the traditional guamo trees - which inspired the farm’s name - maintaining the natural balance and biodiversity of the land while providing essential shade for the coffee plants.
What sets El Guamo apart is its innovative drying technique. Virginiano Hernandéz has implemented a specialized adjustable roof system (helva) that allows precise control of airflow and temperature. This unique approach ensures optimal development of each bean’s flavor profile, reflecting his commitment to quality.
During harvest season, the farm comes alive with the energy of 8 workers, mostly family members, working together to select and process the cherries carefully. Mr. Hernández’s son is actively involved, ensuring the family’s coffee legacy continues. The farm represents not just a business but a way of life in San Agustín, where coffee cultivation has been a community cornerstone for generations.
