Abelino grew up producing coffee with his father and started his own farm after receiving a small plot of land as an inheritance.
For many years he sold his coffee to local intermediaries, and both him and his neighbours were unaware of the quality of their coffee and the possibility of entering the specialty coffee market With Cooperative San Ignacio, their dreams became a reality; they are getting a better price for their coffee and selling it worldwide.
To produce this Caturra Yellow Honey, after hand picking the coffee cherries only the floating ripe ones are selected to ferment in bags for 16 to 20 hours. Afterwards, cherries are depulped and transported to Frontera San Ignacio dry mill, where they dry in African beds and patios for 30 days.
