The Ayarza region is especially marked by the drastic landscape and the cold blue water of Lagoa de Ayarza and Lagoa Azul. The lake, formed by two huge volcanoes that collapsed and formed a large crater, is surrounded by numerous legends that have never been unveiled.
This is a region with enormous potential in the production of specialty coffees, where several small producers work. One of the classic processing methods in the region is washed, which reveals the excellent characteristics of these coffees and allows us to obtain in this Guatemala Ayarza Blue a unique profile in the cup, with notes of chocolate milk, tartaric acidity and molasses.
