The Alfaro family has been producing coffee for four generations, at the El Gobiado farm they grow 50% Red Bourbon and 50% Orange Bourbon. The farm sits in El Salvador’s main ‘protected highway’ forest and for that reason the whole ecosystem benefits from it, including the coffee plants and the farm plays a vital role as a sanctuary for migratory and native birds. For this specific coffee the Orange Bourbon cherries are handpicked when perfectly ripe and processed the same day, this natural takes between 25-32 days to dry and then 60 more days to rest in optimal conditions. In the cup we should expect a beautifully balanced, milky body, sweet and floral coffee.
