Our Colombia Los Sauces comes from southwest Colombia, a region known for the quality of its coffee, but also for having a high concentration of small farmers. This means that coffee generally receives a high level of care and attention to maximize quality and yield. It is a region that has a rich environmental diversity and a wide range of different ecosystems in which coffee can be grown. At altitudes of up to 2,300 masl, coffees can ripen slowly, producing a profile with distinct citrus acidity and notes of exotic fruits, dark chocolate and herbs.
This coffee was processed with honey, with a manual selection of ripe berries that are peeled and dry fermented in a tank for 15 hours with controlled temperature and acidity (PH4). Afterwards it dried in a parabolic oven for about 20 days.
