This Ethiopian Natural Sidamo Berra Xaddicho is put together by Abate Kisho who has more than 20 years of experience growing coffee from the Berra district within the Yirgalem zone in the Sidama region of Ethiopia. The coffee is sourced from family-owned farms within the Sidama growing region of Ethiopia. It represents more than 180 local farmers and 8 ha of land.Coffee cherries are picked at their optimum ripeness. Cherries are sorted in a floatation tank, where unripe ones float and are removed. The cherries pulp is mainly removed and placed in the water tank to ferment for 24-72 hours. After this, beans are rines and dried in the shade on african raised bed for one to two weeks. The total drying time depends heavily on the atmospheric conditions, such as wind, clouds, and relative sunlight. The cherries are then dehulled to remove the papery parchment layer left.
